Coyote Ugly is the product of Liliana “Lil” Lovell's dream. At the age of 24 Liliana led a cool life as a bartender gaining notoriety and making money. Realizing the futility of working for others, she conceived the bold idea of opening her own bar. Thus Coyote Ugly was born. It threw open its doors to the public on January 27, 1993 in the city of New York.

"The Muse of the Coyote Ugly Saloon" - - written by former Coyote bartender Elizabeth Gilbert for GQ – catapulted the bar into the limelight. The bar basked in the glory of arc lights when a movie “Coyote Ugly” starring Piper Perabo and Maria Bello hit the screen. The phrase “We don't serve water here!” quickly became the rage. Las Vegas was the location for the first outpost in the Coyote Ugly Saloon franchise, opening a licensed bar in November 2001 in the New York- New York Hotel & Casino. Her formula for success is beautiful girls and drinks. People frequent this joint for different reasons. Many frequent this place for its drinks, yet others come to ogle at the new bartender gyrating in the bar.
